Glad to see someone writing about food on Medium, Niamh. Hope you keep doing it! Issues surrounding our food and where it comes from is extraordinarily important. And as you say, it’s something we take for granted when it is in fact linked to illnesses or outbreaks. The potential solutions for this are of great interest to me and my work…I haven’t heard of Viant before, but I’m excited to check it out. Will knowing the origin of our food ultimately change how people eat? Or will there still be a sense, as I think there is now, that it’s “good enough”?
I think a greater emphasis on local food economies is something to keep in mind too. Many of us (in the U.S.), whether we realize it or not, live close enough to where food is being grown.
